The Production Manager assists the Executive Chef with the food production process, to include food ordering, menu development, food ordering, menu development, production sheets, food safety & sanitation, inventory and HACCP.

Duties and Responsibilities

  • Oversee the hiring and training food production personnel
  • Work closely with the Executive Chef to ensure every aspect of the food production process to ensure compliance with established procedures and standards
  • Oversee the maintenance, repair, and replacement of food production equipment to ensure smooth work operations
  • Work closely with the Executive Chef and vendors to promote and implement new menu options
  • Set production objectives and implement action plans for achieving set targets
  • Prepare periodic reports to update upper management on food production activities
  • Create work shifts to ensure round-the-clock food production operations
  • Maintain accurate inventory of raw materials and processed food products
  • Ensure products and raw materials are stored properly at optimum conditions
  • Ensure all company regulations and government legislations are adhered to
  • Hazard Analysis Critical Control Points (HACCP), ServSafe, and facility policies and procedures


  • Bachelor’s degree or equivalent experience
  • ServSafe Certified or the ability to obtain within (30) days of hire
  • Strong financial background as it pertains to recipe and menu costing
  • Experience in high volume food purchasing experience
  • Minimum of 3 years kitchen supervisory and/or management experience
  • Full knowledge of HACCP
  • Must be able to work weekends, nights and some Holidays
