Description
The Production Manager assists the Executive Chef with the food production process, to include food ordering, menu development, food ordering, menu development, production sheets, food safety & sanitation, inventory and HACCP.
Duties and Responsibilities
- Oversee the hiring and training food production personnel
- Work closely with the Executive Chef to ensure every aspect of the food production process to ensure compliance with established procedures and standards
- Oversee the maintenance, repair, and replacement of food production equipment to ensure smooth work operations
- Work closely with the Executive Chef and vendors to promote and implement new menu options
- Set production objectives and implement action plans for achieving set targets
- Prepare periodic reports to update upper management on food production activities
- Create work shifts to ensure round-the-clock food production operations
- Maintain accurate inventory of raw materials and processed food products
- Ensure products and raw materials are stored properly at optimum conditions
- Ensure all company regulations and government legislations are adhered to
- Hazard Analysis Critical Control Points (HACCP), ServSafe, and facility policies and procedures
Qualifications
- Bachelor’s degree or equivalent experience
- ServSafe Certified or the ability to obtain within (30) days of hire
- Strong financial background as it pertains to recipe and menu costing
- Experience in high volume food purchasing experience
- Minimum of 3 years kitchen supervisory and/or management experience
- Full knowledge of HACCP
- Must be able to work weekends, nights and some Holidays
